Questo vino
Vineyard and terroir
The vineyard lies at the Cavaion Veronese estate, between Peschiera and Pozzolengo on the southern shore of Lake Garda. Its soils are clay and limestone, and its 100 rows are planted with Turbiana.
Grapes
Turbiana forms the basis of the blend, with a small proportion of Chardonnay. The fruit is selected in the vineyard.
Vinification
The grapes are harvested by hand into small crates at optimal ripeness. Twenty per cent of the crop is left to dry slightly on the vine, increasing structure and concentration. After selection, the grapes are gently pressed. Fermentation takes place with skin contact in steel tanks at a controlled temperature of 18–20 °C.
Ageing
The wine remains on its lees until February of the year following the harvest, then is bottled.
Tasting profile
The wine combines freshness with depth and structure.
Label / history
The wine takes its name from the vineyard’s 100 rows: “cento filari” means “one hundred rows” in Italian.
