Vinification
The grapes are gently pressed and fermented in stainless-steel tanks at a controlled temperature of 16 °C. A second fermentation takes place in sealed cuvées, producing the gently sparkling, low-pressure style known in Italy as frizzante.
Label / history
Cleto Chiarli founded the company in 1860 after managing Trattoria dell’Artigliere in central Modena, where he made Lambrusco for the restaurant’s regular customers. Its reception prompted him to begin wider commercial production. The Chiarli family owns more than 90 ha of vineyards in the Lambrusco DOC production area. In 2002, Mauro and Anselmo Chiarli decided to build a modern winery at the Azienda Agricola Castelvetro estate; since 2003, it has produced Lambrusco under the “Cleto Chiarli” brand.
