Vinification
The grapes are gently pressed, then fermented in stainless-steel tanks at a controlled 16 °C. A second fermentation takes place in small cuvées, producing a gently sparkling, lower-pressure style known in Italy as Frizzante.
Label / history
Cleto Chiarli founded the company in 1860 after managing Trattoria dell’Artigliere in central Modena, where he made Lambrusco for the restaurant’s regular customers. Their reception encouraged him to produce the wines for wider sale.
In 2002, Mauro and Anselmo Chiarli decided to build a winery at the Azienda Agricola Castelvetro estate. Since 2003, it has produced Lambrusco under the “Cleto Chiarli” brand.
