Vinification
The grapes are gently pressed, then fermented in stainless-steel tanks at a controlled temperature of 16 °C. A second fermentation takes place in small cuvées, producing a lightly sparkling, low-pressure style known in Italy as Frizzante.
Label / history
Cleto Chiarli founded the company in 1860 after managing Trattoria dell’Artigliere in central Modena, where he made Lambrusco for regular customers. In 2002, Mauro and Anselmo Chiarli decided to build a new winery at the Azienda Agricola Castelvetro estate. Since 2003, this winery has produced Lambrusco under the “Cleto Chiarli” brand.
