The grapes are harvested in the final ten days of September. They undergo low-temperature maceration and are then destemmed before temperature-controlled fermentation in stainless-steel tanks.
Ageing
During maturation, winemaker Amedeo De Luca employs bâtonnage to maintain continuous contact between the wine and its lees.
