Vineyard and terroir
The wine comes from Veneto. Contarini’s own vineyards cover 12 hectares in eastern Veneto, in the Conegliano and Valdobbiadene area. The Alps shelter the vineyards from cold northerly winds, while breezes from the Adriatic Sea bring warmth. The soil contributes to the development of a broad range of flavours and aromas. The winery also holds long-term contracts with regional growers who collectively manage 1,500 hectares.
Vinification
After harvest, the grapes are crushed, destemmed and gently pressed. Only free-run juice is used. Primary fermentation takes place at low temperature, after which the base wine is clarified, equalised and stabilised. Secondary fermentation is carried out by the Charmat method in a sealed tank at reduced temperature, under the pressure of naturally produced carbon dioxide. The wine then undergoes cold sterile filtration and is bottled isobarically.
