Vinification
The base wine is made from Cortese and combined with Italian brandy and between 30 and 50 natural herbs, spices, roots and seeds. Production involves cold maceration. Publicly identified botanicals include coriander seeds, bay leaf, chamomile flowers, cinnamon, angelica root, nutmeg, pepper seeds, carob pods, rhubarb root, sage, lemon zest, sweet orange peel, liquorice root and sandalwood; the remaining ingredients are secret.
Tasting profile
Balanced, with fresh, complex notes of Asian medicinal herbs, Italian spices and fresh citrus, followed by a slight bitterness.
Serving and pairing
Used in classic cocktails including the Manhattan and Martini.
