Vineyard and terroir
The fruit comes from a 75 ha estate in Orvieto at 300 m above sea level. The sedimentary soils contain clay and limestone. The vines average 15 years of age and are planted at 6,000 vines per hectare.
Vinification
The wine was developed using findings from research conducted with the University of Viterbo. Harvest timing varies by variety: Merlot is picked in early September; Cabernet Sauvignon and Sangiovese in the third week of September; and Aleatico in early October. The grapes are carefully selected, pressed and vinified separately by variety. Before fermentation, they undergo 48 hours of cold maceration to extract and preserve their aromas. Fermentation takes place in stainless-steel tanks at 13–15 °C.
Ageing
The wine rests for four months: three months in neutral stainless-steel tanks and one month in bottle.
Tasting profile
The separately vinified varieties form a complex bouquet, with their distinctive aromas and flavours complementing one another. The palate is balanced.
