Vineyard and terroir
The grapes come from Tenuta Ficuzza, near Palermo, at 700 m above sea level. Mediterranean shrubs, wind and altitude give them freshness and elegance. Inzolia is planted on southeast-facing hills; Chardonnay grows on east-facing slopes.
Vinification
Both varieties are harvested by hand: Chardonnay in August, Inzolia in the first week of September. The grapes undergo 12 hours of cold skin maceration at 8 °C, then pneumatic pressing and cold settling. Fermentation takes place in stainless steel tanks at 18–20 °C.
Ageing
The wine rests on its lees in stainless steel tanks for 4 months, followed by further time in bottle.
Label / history
The name comes from a forest near the town of Salemi. The wine pairs Sicilian Inzolia with Chardonnay in a blend the source calls innovative.
