Vineyard and terroir
The grapes are grown in Sicily. They are Catarratto Extra-Lucido, a variety with brighter acidity than regular Catarratto.
Vinification
The grapes are picked at optimal ripeness and vinified gently to preserve their natural freshness and aroma. They undergo cold skin maceration at 8 °C for around 12 hours, followed by gentle pressing. The must is left to settle, then fermented at a controlled 18–20 °C.
Ageing
The wine ages on fine lees in stainless steel tanks for at least 4 months, which adds freshness, fruit, minerality and a pleasing texture.
Tasting profile
A modern white with a vibrant Sicilian character: fresh, lively, clean and juicy, with mineral notes and a pleasing texture.
Serving and pairing
Suited to a summer aperitif or a seafood dinner.
