Vineyard and terroir
Sicily has a sunny, warm climate with marked differences between day and night temperatures, which allows wines that are both rich and fresh. Together with the terroir and the island soils, this climate shapes the wine's energy, brightness and elegance. The vineyards are planted at 5,000 vines per hectare, with a yield of 60 hl/ha. The moderate yield helps concentrate flavours and aromas.
Vinification
The grapes are destemmed and then cold-macerated on the skins for 2 days at 10 °C, which brings out bright aromas and gentle floral notes without heaviness. Fermentation takes place at 26–28 °C with frequent pump-overs and punch-downs, extracting colour, tannins and aromatic compounds. Malolactic fermentation takes place in stainless steel tanks.
Ageing
The wine rests on fine lees for at least 5 months, then ages in bottle. These steps give structure, a silky texture and greater depth of flavour.
