Vineyard and terroir
Viognier is grown at Tenuta Dàgala Borromeo in the Trapani countryside. The site has a hilly pedoclimate, south/south-west exposure at 230 m a.s.l., and medium-textured soil tending toward clay. The wine is produced from organically farmed grapes.
Grapes
100% Viognier.
Vinification
The grapes are harvested by hand during the last week of August. Gentle pressing is followed by fermentation at controlled temperature.
Ageing
The wine spends three months on fine lees in stainless-steel tanks with daily stirring, followed by three months in bottle.
Technical data
IGT Terre Siciliane. Certified organic wine.
Tasting profile
Straw yellow with green reflections. The bouquet is gently floral and fruity, with delicate yellow-peach and loquat notes. The palate is elegant and well-bodied, with good persistence and pronounced acidity.
Serving and pairing
Suited to fish-based first courses, light fish main courses and raw seafood.
Label / history
Caeles Viognier forms part of Firriato’s organic-wine project. Organic management across the company’s vineyards received formal certification in 2007.
