Vineyard and terroir
The fruit comes from organic vineyards in Emilia, farmed biodynamically.
Vinification
After harvest, the grapes undergo a short skin maceration to extract flavour, minerals and aromas. Fermentation starts spontaneously with natural yeasts and proceeds without temperature control. The wine is bottled without filtration and may therefore develop a natural sediment. Fermentation restarts in the bottle, producing the sparkle by the traditional Ancestral Method.
Tasting profile
Juicy, light and refreshing, with a rich flavour, excellent structure and the bright aroma typical of Barbera. The alcohol is well integrated and barely perceptible. With time, the wine develops secondary and tertiary aromas and flavours.
