Vineyard and terroir
The grapes come from the Roero hills, where production is confined to 19 municipalities in the province of Cuneo on the left bank of the Tanaro River. The vineyards lie at 250 m a.s.l., face south to south-east and are planted on limestone-and-sand soils. Vines are Guyot trained. The calcareous, sandy terrain contributes texture and a saline character.
Grapes
100% Arneis. In Piedmontese dialect, arneis can mean gruff or surly—terms associated with the exuberant character of a variety historically known as Nebbiolo Bianco until the 1960s.
Vinification
The grapes are harvested by hand in mid-September. Fermentation takes place in temperature-controlled tanks for 20–22 days, at no more than 17°C.
Ageing
Ageing takes place on fine lees in stainless-steel tanks, with periodic bâtonnage.
Tasting profile
Straw yellow with greenish reflections. The nose is fresh and delicate, with broom and chamomile aromas. The palate is juicy and mineral, with pronounced savouriness.
Serving and pairing
Serve at 8–10°C. Pair with fish, shellfish, white meats, seasonal vegetable frittatas, appetizers and summer salads. It also works as an aperitif and with Japanese cuisine. The wine may be enjoyed immediately or allowed to develop through moderate ageing.
