Vineyard and terroir
The grapes grow on warm, sunlit slopes in central and western Sicily, in vineyards at 150–400 metres above sea level. The soils are mixed. The island climate is characterised by mild winters and hot, dry summers.
Vinification
The grapes are harvested by hand in the second half of September and gently pressed in a horizontal membrane press, extracting less than 60% of the juice. Fermentation takes place in stainless-steel tanks at 17 °C.
Ageing
The wine remains in stainless-steel tanks until the following spring, followed by two months in bottle in the winery’s cool cellars.
Tasting profile
The aroma is rich, while the palate is lively, bright and well balanced.
Label / history
The first bottle of Corvo was released almost 200 years ago.
