Vineyard and terroir

Kàdos is made from 12 ha of Grillo at Tenuta Risignolo, around Calatafimi and Salemi in western Sicily. The hilly vineyard lies at 220–250 m above sea level on subalkaline clay soils with a medium limestone content. It is planted at approximately 4,000 vines per hectare and yields about 60–70 quintals per hectare. The vines are espalier-trained with spur-pruned cordons; rows are oriented 45° north-west and the vineyard faces north-west.

Grapes

100% Grillo.

Vinification

The grapes are destemmed and pressed before fermentation begins at 16–18 °C. At approximately 3% alcohol, about 20% of the fermenting must is transferred to oak barriques to complete fermentation, while the remainder continues in stainless-steel tanks.

Ageing

After fermentation, the two portions mature separately in tank and barrique on their lees for several months. They are then blended, and the finished Kàdos rests in bottle for at least one month before release.

Technical data

The 2024 has 12.5% alcohol, total acidity of 5.7 g/L and pH 3.21. Formats are 75 cl and 150 cl. Under suitable storage conditions, it is best consumed within three years.

Tasting profile

Straw yellow with delicate golden reflections. The bouquet is intense, combining tropical fruit and Sicilian flowers with vanilla. The palate is broad, rich and velvety, with substantial structure and a pleasantly savoury finish.

Serving and pairing

Serve at 8–10 °C. Pair with fish starters, raw seafood and vegetable-based main courses; white meat and grilled vegetables are additional suggested matches.

Vintage notes

The 2024 season followed a dry autumn and winter and a dry spring. Summer was hot and rainless, with substantial differences between daytime and nighttime temperatures. Harvest ran from the end of August through the beginning of September.

Label / history

The label uses Mimmo Pintacuda’s 1968 photograph La pendolare (The Commuter). The first Kàdos vintage was produced in 2001.
