Vineyard and terroir
The grapes grow on hills in central and southwestern Sicily, at elevations of 150–400 metres.
Vinification
Harvesting is by hand from late August to mid-September. The grapes are gently pressed in a horizontal membrane press to preserve their aromatic character; before pressing, the Syrah undergoes cold skin maceration. Fermentation takes place in stainless-steel vats at 17 °C.
Ageing
The wine remains in the stainless-steel vats until spring. After bottling, it matures for approximately two months in the winery’s cellars at 15–16 °C.
