Vineyard and terroir

Suòlo 5 is made from Zibibbo grown on Soil No. 5 in the fertile hills of Tenuta Risignolo in western Sicily. The site has clay- and limestone-rich soils and was selected specifically for this variety.

Grapes

100% Zibibbo.

Vinification

The grapes were hand-picked on 25 August 2021 into approximately 4 kg crates and transported to the winery by refrigerated lorry. After unloading, they were sorted on a conveyor, destemmed and gently crushed. The berries spent about four hours macerating with their skins in a soft press. After gentle pressing, the must settled in stainless steel for 16–20 hours at 14 °C. Fermentation began after static settling; at approximately 3% alcohol, the must was transferred to fine-grained, gently toasted oak barriques to finish fermentation.

Ageing

Ageing continued for at least seven months in barriques on lysed yeast lees, followed by at least six months in bottle before release.

Technical data

The 2021 has 12.8% alcohol, total acidity of 5.9 g/L and pH 3.12. Each bottle is individually numbered. The available format is 75 cl.

Tasting profile

Straw yellow with subtle green reflections. Floral aromas lead an intense bouquet of tropical fruit, Sicilian citrus, orange blossom and Mediterranean scrub, followed by hydrocarbon nuances. The palate is dry, fresh, savoury and distinctive.

Serving and pairing

Pair with fish starters, raw seafood, fish-based first courses, grilled red tuna, fish roe or sea urchins.

Vintage notes

The 2021 season had above-average temperatures, a rainy winter and dry spring and summer. Very hot conditions at the beginning of summer gave way to cooler weather from early August, supporting full grape ripening.

The name identifies Soil No. 5 of the vineyard. Each bottle is numbered.
