Vinification
The grapes are harvested by hand in late August to preserve their crisp acidity, then destemmed. The wine is produced using the Charmat method at Due Palme’s sparkling-wine facility.
Label / history
Amaluna was the first sparkling wine produced in Salento and the first wine made at Due Palme’s new sparkling-wine facility. Its name celebrates the moon as a symbol of femininity and creation, reflecting its special significance to farmers and their hopes and wishes.
Cantine Due Palme is a cooperative founded in 1989 and based in Cellino San Marco. It brings together 400 wine producers and is led by chief winemaker Angelo Maci. Red wines account for 85% of its total production.
