Vineyard and terroir
The grapes come from vineyards in Monforte d’Alba. The vines are 15–25 years old, trained to Guyot and planted on sandy-loamy soils with southern and southwestern exposures. Yield is 9,000 kg/ha. The vineyards are managed according to sustainable-viticulture practices.
Grapes
100% Dolcetto.
Vinification
The crop is harvested entirely by hand. Whole bunches are manually selected on a vibrating table and cooled with carbonic snow, limiting oxidation and considerably reducing the need for sulphur. Following destemming, the berries undergo a second manual selection on another vibrating table and are then gently crushed. Screw conveyors are excluded from this handling process to minimize stress on the fruit.
The must is cooled before fermentation to preserve its character, then fermented in temperature-controlled stainless-steel vats. Maceration lasts approximately 10 days and includes délestage.
Ageing
The wine sees no oak and rests exclusively in bottle for approximately three months before release.
Technical data
Vintage 2023. Winemaker: Paolo Giacosa. The wine page gives 12.50% alcohol by volume, while the 2023 technical sheet gives 13%. Recommended cellaring is 3–4 years.
Tasting profile
Deep ruby red. The nose is fruity, vinous and inviting, with red-fruit and ripe-grape aromas. The palate is smooth and fine, medium-bodied and dry, with a recognizable Dolcetto-grape character. Its style emphasizes gentle acidity, freshness and versatility at the table.
Serving and pairing
Serve at 15–18 °C. Pair with appetizers, pasta, risotto, chicken, cheeses or salami.
Vintage notes
The 2023 growing season followed a colder winter with two snowfalls and abundant rain that replenished the previous year's water deficit. A fairly rainy spring required close attention to disease pressure. Severe July storms had uneven effects, while intense heat arrived in early August without causing vine water stress. The estate's harvest began on 16 August with grapes for Alta Langa, continued with white varieties in September and concluded with red varieties in late October.
Label / history
In Piedmontese dialect, “Dolcetto” is interpreted as “gentle in acidity,” particularly in comparison with Barbera. Dosso is presented as an easy-to-pair expression of this traditional character, combining gentle drinkability with fresh elegance.
