Vineyard and terroir

Coste&Fossati® comes from some of the Vaira family’s most historic parcels. Between 1979 and 1985, Aldo Vaira identified and collected old Dolcetto biotypes, then grafted them into two of the estate’s finest plots. These red-stemmed vines give a limited production conceived for intensity, freshness and the capacity to evolve with age.

Aldo Vaira embraced organic farming in 1971 while still a university student. The vineyards have been protected by spontaneous grass cover for approximately 50 years, encouraging aeration below the surface and limiting erosion. The estate vineyards are certified, and cultivation involves extensive manual work. Recent vineyard research has also concentrated on monitoring and increasing the biodiversity of flora and fauna across the estate’s vineyards, fields and woodland.

Grapes

100% Dolcetto.

Vinification

For the 2023 vintage, the grapes were picked on 15 and 28 September. Gentle vinification lasted approximately 20 days in vertical vats at temperatures below 31°C. Submerged-cap maceration was exceptionally omitted in this vintage. Malolactic fermentation followed in stainless-steel vats.

Ageing

The 2023 spent five months in stainless steel and was racked twice during maturation. Bottling took place on 2 May 2024.

Technical data

The wine is presented in a 750 ml bottle closed with natural cork.

Tasting profile

The 2023 is deep purple. Its bouquet combines floral notes, small red berries, liquorice and balsamic nuances. The palate is particularly refined, with vivid raspberry-like acidity and rounded, balanced tannins. Blackberry, fresh plum and blackcurrant complete the aromatic profile.

Vintage notes

The highly variable 2023 growing season nonetheless displayed the hallmarks of a classic year in the Barolo area. Budbreak arrived early, around mid-March, followed by early flowering and a late harvest accompanied by favourable day-to-night temperature variation. Loose clusters formed from flowering onward, producing very healthy grapes at low yields. The resulting wines were expected to show density, vibrant energy and firm structure.
