Vinification
Inspired by the traditions of Sicilian farmers, Fabio Ferracane departed from the methods of modern oenology normally used for this style. Fermentation takes place at low temperature, and the wine is bottled shortly before it is complete. The small amount of residual sugar allows fermentation to finish in the bottle, producing carbon dioxide naturally.
Vintage notes
The 2021 growing season began slightly earlier than usual, bringing the harvest forward by about one week. The summer included several very hot days, tempered by rainfall once in July and once in August. These rains reduced the effects of the heat, while otherwise relatively dry conditions helped keep the grapes healthy and contributed to a distinctive harvest.
Label / history
The name refers to the Sicilian exclamation “Foddre e…!!!”, meaning “he’s stupid, crazy, mad!” Although generally used disapprovingly, the expression can also characterize unconventional and original thinking. Sicilian farmers would excitedly use the phrase while uncorking bottles and watching the bubbles rise towards the neck.
