Vineyard and terroir
Moscato Giallo is trained using the Guyot system in plots at 400–450 m. The vineyards face south, south-west and west, on soils combining sand and clay.
Grapes
Moscato Giallo, vinified as a dry wine.
Vinification
The destemmed grapes undergo a very brief maceration to encourage aromatic extraction, followed by pressing. The must then ferments at controlled temperature.
Ageing
Before bottling, the wine remains on its lees for approximately five months in stainless-steel tanks to develop its aromatic potential.
Technical data
Yield: 60 hL/ha. Production: 5,000 bottles.
Tasting profile
The colour is a gently muted golden yellow. The fine, aromatic profile opens with citrus, white peach, lemon balm and elderflower, followed by nutmeg and sweet spices. Pronounced acidity and a discreet mineral structure give the dry wine freshness and an easy, pleasurable character.
Serving and pairing
Serve at 10–12 °C. Suitable as an aperitif or with light, aromatic and spicy starters.
