Vineyard and terroir
Pinot Nero is cultivated with the Guyot training system at elevations of 750–1,150 metres. The vineyards face south and southwest, on mixed soils of dolomite and porphyry.

100% Pinot Nero.
Vinification
Part of the crop is pressed as whole bunches; the remainder is destemmed and then pressed.
Ageing
The base wine spends six months in stainless steel. Tirage takes place in the spring following harvest, after which the wine remains on its lees for approximately four years. Disgorgement is carried out six months before release.
Technical data
Yield is 30–35 hl/ha, with production limited to approximately 3,000 bottles. Recommended serving temperature is 5–7 °C.
Tasting profile
A sparkling wine with an attractive colour and a fine, persistent perlage.
Serving and pairing
It can accompany a wide variety of dishes. Its pure Pinot Nero character makes it especially suited to admirers of the variety.
