Questo vino
Vineyard and terroir
The Pinot Nero is grown at 700–750 metres in high-density, Guyot-trained vineyards. The soils derive from Dolomitic erosion, and carefully selected clones are used.
Grapes
Pinot Nero; the percentage is not specified.
Vinification
The grapes are destemmed and pressed in the manner used for white varieties. The must ferments at controlled temperature in stainless-steel tanks. Malolactic fermentation follows, after which the wine matures in tank for several months.
Technical data
Yield is 35–40 hl/ha and production is approximately 5,000 bottles. Recommended serving temperature is 12–14 °C.
Tasting profile
Light cherry red. The fresh, fruit-led bouquet combines red berries, cherries and raspberries with aromatic herbs and a touch of cocoa. The palate has fresh acidity, sustained savouriness and a refreshing finish.
Serving and pairing
Serve as an aperitif or with simple fish dishes, Mediterranean first courses, cold meats and fresh cheeses.
