Vineyard and terroir
Müller Thurgau grows at elevations between 500 and 800 metres on south- and southwest-facing sites. The soils combine clay and porphyry. The main description identifies Guyot training, while the technical sheet also mentions traditional pergola-trained vines.

Vinification
A brief maceration encourages aromatic extraction. The grapes are destemmed, gently pressed and fermented at controlled temperature in stainless-steel tanks.
Ageing
The wine remains in stainless steel for approximately five months, followed by a short period in bottle.
Technical data
Yield: 70 hl/ha. Production: 30,000–35,000 bottles. Recommended serving temperature: 12–14 °C.
Tasting profile
Bright straw yellow. The aromas evoke Muscat-like notes, fresh fruit, peach and yellow primrose. The palate is elegant and savoury, with fresh acidity and a pleasing finish. Its direct, fresh character makes it attractive while young.
Serving and pairing
Serve as an aperitif or with light Mediterranean first courses, fish salads and fresh goat cheeses.
Label / history
The Sofi wines take their name from Sofia, the family's daughter. As a child, she wanted a wine bearing her own name and label. The project matured as she grew, moving closer to a youthful style of taste. The Sofi family comprises Müller Thurgau, Schiava and Rosso, conceived as fresh wines expressing varietal and regional character.
