Vineyard and terroir
Schiava is cultivated with the traditional pergola system in south-facing vineyards at 350–400 metres. The soils are gravelly and of medium weight.

Vinification
After destemming, the grapes ferment at controlled temperature in stainless-steel tanks. Malolactic fermentation is completed, and the young wine then matures for a further five months in steel.
Technical data
Yield is 70–80 hl/ha and production is approximately 10,000 bottles. Recommended serving temperature is 14–16 °C.
Tasting profile
Light ruby red, with aromas of cherry and red cranberry accompanied by subtle cocoa and bitter-almond notes. The palate combines approachable simplicity with complexity and a distinctly vinous character. Acidity is low and the tannic structure is light.

A versatile red for local dishes and Mediterranean cuisine, intended for uncomplicated, convivial drinking.
Label / history
The Sofi range comprises Müller Thurgau, Schiava and Rosso. It takes its name from the Haas family's daughter Sofia, who had wanted a wine bearing her name and a label of her own design since preschool. The range was subsequently developed with her involvement to reflect a youthful taste, freshness, typicity and terroir.
