Vineyard and terroir

The fruit comes from Liste in the Barolo area, the site of Borgogno’s only vineyard of very ancient origin. The plots are situated at 33–270 metres above sea level, face south-east and have limestone-clay soils. Planting density is 4,000 vines per hectare.

Vinification

The grapes are harvested by hand in the final third of September. Fermentation proceeds naturally without added cultured yeasts for 12 days at a controlled temperature of 24–28 °C, followed by gentle pressing.

Ageing

The wine matures for seven months in stainless-steel tanks at 18 °C, followed by 30 days in bottle.

Tasting profile

Fresh and highly aromatic, with a fruity character. The palate is soft and elegant.
