Vineyard and terroir
The estate is in Gaiole, a small town in Chianti, Tuscany, and covers approximately 25 hectares. Its vineyards are managed using a modern vine-selection system.
Vinification
The grapes are harvested by hand at full ripeness and destemmed. Part of the fruit ferments in oak barrels with exposure to oxygen, while the remainder ferments in stainless-steel tanks. The winery uses computerized systems and modern grape-processing equipment.
Ageing
The wine matures for one year in new French oak barrels.

Label / history
The winery was designed by Jacopo Morganti, whose family had been involved in winemaking for several generations. His grandfather, Enzo Morganti, helped create wines that later became known as Super Tuscans. After overseeing the winery’s renovation, Jacopo remained at Il Colombaio di Cencio as its oenologist. “Il Futuro” originated as his first experimental wine.
