Vineyard and terroir
The Pecorino fruit is grown in the municipality of Controguerra in northern Abruzzo, between the Adriatic Sea and the Apennines. The vineyards face southwest at 250 m above sea level and have clay-rich soils.
Vinification
The grapes are harvested by hand and selected before fermentation. Most of the must ferments in temperature-controlled stainless-steel tanks at 16–18 °C, while approximately 10% ferments in oak barrels.
Ageing
The portion fermented in oak remains in barrel for four months.
