Vinification
Fermentation lasts two to three weeks in wooden vats, with the cap regularly punched down by hand.
Ageing
The wine matures for 30 months in small new oak barrels and is released three years after the harvest.
Label / history
The name combines “pigna”, Italian for “pine cone”, referring to the cone-like shape of Pignolo bunches and the image on the label, with “Colusse”, the name of the vineyard. The native Friulian variety had come close to disappearing because of the difficulty of vinifying it. Silvio Jermann saw potential in its strong character, expression of terroir and freshness, and invested in its revival.
