Vineyard and terroir
Silvio Jermann personally oversees the vineyard. Yields are low, and the harvest is timed precisely so that the grapes reach full potential.
Vinification
Picking takes place in early September, which gives a balance between aromatic ripeness and natural acidity. The Pinot Bianco is vinified by the traditional method for white wines. Fermentation lasts 20 days at a maximum of 16 °C.
Ageing
The wine rests 6 months on fine lees in stainless steel tanks, which gives it roundness and depth. After bottling it matures for several more months in bottle. It is sealed with a screw cap.
Tasting profile
Refined and full-flavoured, with a balance of taste and aroma. Elegant, with bright acidity, a fine saline note and intense fruit aromas. The lees ageing adds roundness and depth, and the palate is balanced and harmonious.
Serving and pairing
Suited to fried dishes, seafood soups and pasta.
Label / history
Made since 1974. The text calls Pinot Bianco a true rarity in Friuli.
