The fruit comes from vineyards in Verduno.
Vinification
The grapes are hand-harvested at optimal ripeness and destemmed at the winery. They undergo a 72-hour cold maceration in temperature-controlled stainless-steel tanks with regular pumping over. Alcoholic fermentation lasts nine days, followed by a further 15 days of maceration to extract phenolic compounds and aromas. Malolactic fermentation takes place in stainless-steel vats.
Ageing
The wine matures for six months in stainless-steel tanks.
