Vineyard and terroir
The fruit comes from the San Sebastiano vineyard in Monforte d’Alba. The vines were planted in 2002, 2003 and 2009 on clay soils.
Vinification
Thirty per cent of the grapes are vinified as whole bunches, while the remaining 70% are destemmed. Vinification takes place in a small amphora made entirely from natural material, without enamel or glass-ceramic lining. The method draws on winemaking practices dating back to Roman times.
Ageing
After being racked off its lees, the wine rests for 11 months in amphora.
Label / history
In Italian, “la pipina” means “little thing”, referring to the winery’s very small amphora in which the experiments began. The 2019 vintage comprised 2,700 bottles.
