Vineyard and terroir
The Pecorino is organically grown in the estate’s vineyards in Abruzzo. The vineyards have a microclimate influenced by the Adriatic Sea and the Apennine Mountains, with mineral-rich soils containing limestone and clay.
Vinification
The grapes are harvested by hand at optimal ripeness and undergo whole-cluster carbonic maceration in cement tanks. The wine is bottled without added sulfur.
Ageing
The wine rests for several months before bottling.
