Vinification
The grapes are harvested entirely by hand and undergo cold pre-fermentation skin maceration at the winery. Fermentation begins naturally and proceeds without temperature control. The wine is bottled without filtration or stabilization.
Ageing
The wine matures for two years in French oak barrels, followed by three years in bottle in the winery’s cellars.
