Vineyard and terroir
The fruit comes from estate vineyards in the villages of Santuario and Montalbano, where the vines are up to 100 years old.
Vinification
The grapes are harvested by hand and gently pressed at the winery. Each variety is fermented separately. Nebbiolo ferments for one month in stainless-steel vats with regular manual punch-downs, while Croatina and Vespolina ferment for five days in oak barrels with regular pump-overs.
Ageing
The wine matures for 24 months in large oak casks.
