Vineyard and terroir
The grapes grow in Tuscany on slate and limestone soils.
Vinification
The fruit is harvested by hand during the first half of September. Made as a natural wine, it ferments and macerates for eight months in terracotta vessels.
Ageing
The wine settles naturally in steel tanks for one month, followed by 8–12 months on the skins in terracotta amphorae.
