Vineyard and terroir
The fruit comes from vineyards in Puglia with silty clay and calcareous marl soils. The grapes are harvested by hand relatively late, after the bunches have dried naturally on the vine.
Vinification
The grapes are destemmed and crushed, followed by 20 days of skin maceration. Fermentation takes place at a controlled temperature with selected yeasts. The wine undergoes numerous analytical checks during production and is bottled under cold, sterile conditions.
Ageing
The wine rests in large oak barrels.
