Vineyard and terroir
The organically grown grapes come from Puglia, where the vines are cultivated without chemicals or GMOs. The soils are clay and limestone with patches of marl. The region has a long Mediterranean coastline and plains that gradually rise into low mountains; sea breezes cool the sun-baked ground.
Vinification
The grapes are harvested entirely by hand at optimal ripeness. Only environmentally friendly winemaking products permitted under European regulations are used. After crushing and destemming, the fruit is macerated to extract aroma and colour. Fermentation with selected yeasts takes place at a controlled temperature of approximately 16 °C, followed by up to three weeks of post-fermentation maceration.
Ageing
The wine rests on its fine lees in stainless-steel tanks for eight months. During this period, it undergoes repeated analytical checks for quality and to confirm the absence of animal-derived products.
