Vineyard and terroir
The grapes grow in Piedmont, at the foot of the Western Alps, which surround the region to the north and west and form a natural border with Provence. The climate brings scorching summer sun, cold, biting autumn winds and winter fog.
Vinification
The grapes are harvested by hand in early September. At the winery they are destemmed, gently pressed and vinified. Fermentation with skin maceration takes place in stainless steel tanks at 23 °C for 6–7 days. Malolactic fermentation also takes place in steel tanks.
Ageing
The wine ages a further 4 months in stainless steel tanks.
