Vineyard and terroir
The Chardonnay and Cortese are grown in the company's own vineyards in Piedmont. The climate there is favourable and strongly influenced by the nearby Alps and Apennines.
Grapes
A blend of Chardonnay and Cortese.
Vinification
The grapes are usually picked by hand during the coolest hours of the day, in the first half of September, and placed in crates of 18–20 kg. At the winery they go straight to a cold room and are chilled to 6 °C for several days, which preserves their bright aromas and prevents spontaneous fermentation. After careful selection the grapes are gently pressed. Fermentation takes place in temperature-controlled tanks at 14 °C.
Ageing
The wine ages for 5 months in stainless steel tanks with regular lees stirring. After maturation it is bottled and kept in the winery's cellar at a controlled temperature until release.

Label / history
The name comes from the white truffles of Piedmont.
