Vineyard and terroir
The grapes grow in Veneto in northeastern Italy. The Dolomites shelter the vineyards from cold northerly winds, while southerly winds from the Adriatic Sea provide rainfall, particularly in summer. Diurnal temperature variation supports aromatic development during ripening.
Vinification
After harvest, the Verduzzo is dried on racks in a well-ventilated room. During this appassimento process, the grapes lose at least half their weight, concentrating their sugars and phenolic compounds. The Pinot Grigio is gently pressed immediately upon arrival at the winery, then fermented in temperature-controlled stainless-steel tanks. The base wine undergoes a second fermentation with sugar and yeast in sealed autoclaves according to the Italian Charmat method.
Ageing
The wine rests for one month following its second fermentation.
Tasting profile
The Charmat process preserves the grapes’ original aromas, resulting in a fruity and floral character.
