Vineyard and terroir
The fruit comes from vineyards in the Itria Valley in Salento, around 450 m above sea level. The vines average 15 years of age and grow on red limestone soils. Layers of stone in the subsoil encourage deep rooting, providing access to moist earth and protection during drought. Winters are harsh; summers are generally long and warm, with cooler nights.
Vinification
The grapes are harvested at optimal ripeness and destemmed, then macerated at a controlled temperature of about 10 °C. Alcoholic fermentation takes place in stainless-steel tanks in contact with the skins, under strict temperature control, for 10–15 days. The wine is separated from the pomace by gentle pressing and briefly settled to remove coarse sediment before undergoing malolactic fermentation.
Ageing
After malolactic fermentation, the wine spends 24 months in medium- and lightly toasted French oak barrels. It is then stabilized and bottled, followed by at least six months of rest in the winery’s cellars.
