Vineyard and terroir
Cabernet Sauvignon is grown at the Máté estate in Montalcino. The estate history associates the variety with marl soils and gives a general vineyard density of 6,200 vines per hectare. Grapes are selected and harvested by hand at full maturity.

Vinification
The estate’s general method uses small temperature-controlled stainless-steel vats or new wooden barrels. Manual punch-downs extract colour and tannin while cool must temperatures preserve fruit and spice aromas.
Ageing
The estate describes maturation for its wines of up to two and a half years in Allier French-oak barriques and tonneaux.
Tasting profile
The 2019 is creamy and juicy, combining currant, berries, walnut and fresh herbs with medium body and savoury tannins. The 2017 shows currant, sage and basil, rounded tannins and a savoury finish with pine needle and balsamic notes. The 2016 is more intense, with currant bush, roasted herbs, spice and ripe blackberry over a chewy yet juicy structure. Other vintages introduce blackcurrant, lavender, citrus peel, coffee, violet, wild cherry, clove, cinnamon, espresso, chocolate and cedar. Firm tannins are a consistent feature, variously described as savoury, silky, polished or mineral-coated.
Serving and pairing
The muscular 2004 vintage was recommended with grilled beef or roasts.
Vintage notes
The 2019 and 2017 emphasize medium body, herbal complexity and savoury tannins. The 2016 is fuller and chewier, while the 2013 was tight and built for additional ageing. The 2008 paired violet, blackcurrant jam and wild cherry with lively structure and a long finish. Two separate Wine Spectator entries appear beneath the 2005 heading, reporting different scores and production figures.
