Why are wines described as savory?
Sapidity is presented as a clean, fresh, mineral sensation that becomes especially evident toward the end of a sip. It is distinct from the literal taste of salt and is associated with salivation, energy, tension and persistence, often working alongside acidity.
Mesa’s vineyards are described as lying a few kilometres from the sea on sandy and calcareous soils. Marine influence, constant winds and temperature variation between day and night form the microclimate associated with the mineral and saline character of the grapes.
The article distinguishes three expressions of Vermentino: Giunco as direct, fresh and saline; Opale as fuller and more structured, with yellow-fruit and floral tones supported by persistent minerality; and Galesa as layered and elegant, made from selected parcels. Suggested serving temperatures are 8–10°C, with seafood, oysters, fish tartare, fresh cheeses, aromatic herbs and grilled vegetables among the proposed pairings.
