Questo vino
Vineyard and terroir
The fruit comes from vineyards in Piedmont, planted on east-facing hillsides with white clay soils layered with calcareous sand. Planting density is 4,300 vines per hectare.
Grapes
Pinot Noir and Chardonnay.
Vinification
The grapes are harvested into approximately 9 kg crates and transferred directly to the press for gentle pressing. The must undergoes static settling in temperature-controlled tanks before fermenting in stainless steel at 18–20°C. It remains on its fine lees until spring, when wines from different vineyards are assembled into the cuvée. A second fermentation begins in bottle in May, following the traditional method.
Ageing
The wine matures on its lees in cool, dark, protected cellars for no less than 15 years.
Technical data
Alcohol: 12% vol. Available formats: 1.5 L and 3 L.
Tasting profile
Golden-blond in colour with green reflections, with a very fine and persistent perlage. The intense, complex bouquet recalls bread yeast, white-fleshed fruit and toasted nuts. Long ageing contributes structure and harmony on the palate.
Serving and pairing
Serve at 6–8°C. It works as an aperitif and can accompany an entire meal.
