Vineyard and terroir
The vineyards stand at 280 m above sea level on fine, calcareous Typic Ustorthent hillside soils. The underlying Lequio formation consists of alternating sandstone of varying cementation, sand and compact marl. The vines were planted in 2007 at 4,000 vines per hectare and are trellised and spur-pruned. Yields are 9,000 kg of grapes and 6,300 L of wine per hectare.
Grapes
Pinot Noir and Chardonnay.
Vinification
These are the first grapes harvested, between late August and early September, to preserve freshness and acidity. After soft crushing, the must is chilled to facilitate settling. The clarified must undergoes primary fermentation into a dry white base wine, followed by secondary fermentation using the Martinotti-Charmat method. The sparkling wine is not assembled from different vintages: it is made entirely from the current harvest. Cold stabilization and isobaric bottling complete the process.
Ageing
Approximately six months, partly sur lies. Following primary and secondary fermentation, the sparkling wine remains on its lees for several months.
Tasting profile
Light straw yellow, with a fine, persistent perlage. The bouquet combines green apple, wildflowers and other fruity notes, with a balanced expression of Pinot Noir and Chardonnay. The palate is fresh, dry and fairly persistent.
Serving and pairing
Serve at 12°C with aperitifs and starters.
