Vineyard and terroir
The grapes are grown near Grosseto in Maremma Toscana, south of Siena. The vineyards face southeast and lie on ancient, clay-rich soils containing abundant fossils, with a slightly acidic pH. The plots yield 9,500 kg annually.
Vinification
The grapes are harvested in the second week of September. The must is chilled to promote natural settling and clarification, then decanted. Alcoholic fermentation lasts 21 days at a controlled temperature not exceeding 18 °C.
Ageing
Before bottling, the wine rests in temperature-controlled stainless-steel tanks.
