Vineyard and terroir
The grapes grow in the Pozzillo vineyard, on soils of limestone and volcanic clay.
Vinification
The grapes are harvested by hand and fermented in temperature-controlled stainless-steel tanks. Malolactic fermentation follows and lasts approximately two weeks.
Ageing
The wine ages for six months in steel tanks and French oak barrels, followed by at least three months in bottle in the winery’s cellars before release.
